AmCham members are invited to our dining event on May 5, to experience organic Taiwanese fine-dining with Italian Wine at a private dining room in the Mountain & Sea House.

Night market snacks might be your first impression of Taiwanese cuisine, but Taiwan also has a more delicate and complex cuisine that has grown increasingly hard to find. Mountain and Sea House spent two years redeveloping traditional methods using local ingredients to create the real taste of traditional Taiwan. By consulting with retired master chefs and using time-honored processes, Mountain and Sea House strives to merge modern and traditional cooking methods to rediscover the true taste of authentic Taiwan cuisine.
Mountain and Sea House was founded by Stephanie Ho Yi-chia, granddaughter of local paper and technologies mogul Ho Chuan, founder of the sprawling Yuen Foong Yu (YFY) conglomerate. Ms. Ho established the restaurant to create a place to showcase exceptional agriculture products from Taiwan, and Mountain and Sea House only serves organic foods that are either grown on YFY’s organic farms in rural Yilan County or sourced from other organic farms throughout Taiwan.
 
All four wines to be introduced at the dinner are by the De Stefani family, a maker of fine Italian wines produced naturally, without the use of herbicides and chemical fertilizers in the vineyard or preservatives and sulfites in the cellar.

About the Wines
Prosecco Zero.Millesimato – Extra Dry DOC 2013
Prosecco Zero is produced from an innovative method of vinification that, thanks to a careful use of a temperature zero degrees in the several stages of the way from grapes to wine, allows to exalt and maintain its precious typical fruity aroma with golden apple notes.
GRAPES: Glera.
TASTING CHARACTERISTICS: fine and persistent perlage, light straw yellow color, with greenish hues, fruity bouquet with intense scents of apple, banana and with a flowery finish, medium body, smooth, with a great personality.
FOOD MATCHING: ideal as an aperitif, throughout the meal and in any occasion that requires a toast
 
Vitàlys Chardonnay Veneto IGT 2013
Vitàlys reminds Italy and derives from the Latin word "vitalis", that means vital, full of life. In fact this wine gives happiness and desire to live through the sensations evoked by its tasting.
GRAPES: 100% Chardonnay
TASTING CHARACTERISTICS: straw yellow color; fruity bouquet, with an intense almond and apple aroma; delicate taste, with a long and elegant finish.
FOOD MATCHING: ideal with "cicheti" (typical Venetian appetizers), risotto and seafood salads.

Cabernet Sauvignon Veneto 2012
The grapes of this classic of the Piave area, that come from old vines cultivated in a clay soil, reach a natural balance of ripeness at harvest. Our Cabernet Sauvignon guarantees a pleasant complexity of its structure, with a fruity and a spicy after taste.
GRAPES: 100% Cabernet Sauvignon.
TASTING CHARACTERISTICS: intense ruby color, ripe red fruit bouquet, full body, smooth, with the right level of tannins and notes of wild fruit.
FOOD MATCHING: ideal with tagliatelle with Bolognesse sauce, red meat, braised beef and roast meat.
 
Solèr Rosso Veneto 2011
"Solèr" is a word of the Venetian dialect and means loft, barn. Historically it was used by the grapes grower to dry their best grapes. From this old tradition part of the grapes are naturally dried, resulting in a great smoothness with liquorice notes.
GRAPES: 25% Marzemino, 25% Refosco dal peduncolo rosso, 25% Merlot e 25% Cabernet Sauvignon.
TASTING CHARACTERISTICS: deep ruby color, intense scents of ripe fruit, prunes, and violet, with ethereal and spicy notes; full body, very important structure, with layers of silky tannins and a complex bouquet.
FOOD MATCHING: excellent with stuffed fresh pasta, grilled meat and salumi.
